The meal that sends an allergic person to the emergency room is usually not a mistake on the plate. It is the trace that hitched a ride: the knife that spread peanut butter and then jelly, the fries dropped into the fryer that cooked the shrimp, the "safe" cookie sliced on a crumb-dusted board. Preventing that transfer, formally cross-contact, though nearly everyone says cross-contamination, is mostly a set of small habits. The catch is that several things people trust to work, heat, hand sanitizer, a quick wipe, do not.

Cross-contamination vs. cross-contact, and why heat will not save you

Food-safety training splits the idea in two. Cross-contamination is about germs, raw chicken juice reaching the salad, and cooking fixes it, because heat kills bacteria. Cross-contact is about allergen proteins, and here is the part that rewires how you see a kitchen: normal cooking temperatures do not destroy allergen proteins. Peanut, shellfish, milk, egg, wheat, and the rest survive the fryer, the grill, and the sauté pan. Oil that fried battered fish will deliver fish protein to the next basket of fries; a grill that seared a cheese-topped burger can pass milk protein to the "plain" chicken breast after it. This is why a shared fryer is one of the most common restaurant reaction stories allergists hear, and why the question "is the fryer dedicated?" belongs in every allergic diner’s script.

Restaurants, school, and everyone else’s kitchen

Eating out is manageable with a script. Call ahead or ask directly: "Is there a dedicated fryer? Can the meal be prepared on a cleaned surface with fresh gloves and utensils?" Name the allergy to the server and ask them to tell the kitchen; a good restaurant treats that as routine. Higher-risk zones deserve extra caution: buffets (shared serving spoons), bakeries (airborne flour and shared cases), ice cream shops (one scoop, many tubs), delis (one slicer for cheese and meat), and bulk bins (scoops migrate). For school, the standard playbook is a written allergy action plan on file, soap-and-water hand washing before and after lunch, wipe-down of the eating surface, and no food sharing, arrangements most schools handle daily. And in other people’s kitchens, the polite move that actually works is bringing a guaranteed-safe dish and offering to arrive early enough to plate it first.

What "may contain" labels do and do not promise

U.S. law requires packaged foods to declare the nine major allergens that are ingredients. But the familiar advisory lines, "may contain peanut," "processed in a facility that also handles tree nuts," are voluntary and unregulated. No law defines when they must appear, and their absence is not a safety certification: testing studies have found detectable allergen in products without any advisory label, and none in products carrying scary ones. The workable policy for highly allergic households: treat advisory labels for your allergen as a no, and for high-stakes allergies, favor brands that certify dedicated allergen-free production lines or answer the manufacturer phone line with a straight answer.
